    Repurposed beer yeast may offer a cost-effective way to remove lead from water

    Every year, beer breweries generate and discard thousands of tons of surplus yeast. Researchers from MIT and Georgia Tech have now come up with a way to repurpose that yeast to absorb lead from contaminated water.Through a process called biosorption, yeast can quickly absorb even trace amounts of lead and other heavy metals from water. The researchers showed that they could package the yeast inside hydrogel capsules to create a filter that removes lead from water. Because the yeast cells are encapsulated, they can be easily removed from the water once it’s ready to drink.“We have the hydrogel surrounding the free yeast that exists in the center, and this is porous enough to let water come in, interact with yeast as if they were freely moving in water, and then come out clean,” says Patricia Stathatou, a former postdoc at the MIT Center for Bits and Atoms, who is now a research scientist at Georgia Tech and an incoming assistant professor at Georgia Tech’s School of Chemical and Biomolecular Engineering. “The fact that the yeast themselves are bio-based, benign, and biodegradable is a significant advantage over traditional technologies.”The researchers envision that this process could be used to filter drinking water coming out of a faucet in homes, or scaled up to treat large quantities of water at treatment plants.MIT graduate student Devashish Gokhale and Stathatou are the lead authors of the study, which appears today in the journal RSC Sustainability. Patrick Doyle, the Robert T. Haslam Professor of Chemical Engineering at MIT, is the senior author of the paper, and Christos Athanasiou, an assistant professor of aerospace engineering at Georgia Tech and a former visiting scholar at MIT, is also an author.Absorbing leadThe new study builds on work that Stathatou and Athanasiou began in 2021, when Athanasiou was a visiting scholar at MIT’s Center for Bits and Atoms. That year, they calculated that waste yeast discarded from a single brewery in Boston would be enough to treat the city’s entire water supply.Through biosorption, a process that is not fully understood, yeast cells can bind to and absorb heavy metal ions, even at challenging initial concentrations below 1 part per million. The MIT team found that this process could effectively decontaminate water with low concentrations of lead. However, one key obstacle remained, which was how to remove yeast from the water after they absorb the lead.In a serendipitous coincidence, Stathatou and Athanasiou happened to present their research at the AIChE Annual Meeting in Boston in 2021, where Gokhale, a student in Doyle’s lab, was presenting his own research on using hydrogels to capture micropollutants in water. The two sets of researchers decided to join forces and explore whether the yeast-based strategy could be easier to scale up if the yeast were encapsulated in hydrogels developed by Gokhale and Doyle.“What we decided to do was make these hollow capsules — something like a multivitamin pill, but instead of filling them up with vitamins, we fill them up with yeast cells,” Gokhale says. “These capsules are porous, so the water can go into the capsules and the yeast are able to bind all of that lead, but the yeast themselves can’t escape into the water.”The capsules are made from a polymer called polyethylene glycol (PEG), which is widely used in medical applications. To form the capsules, the researchers suspend freeze-dried yeast in water, then mix them with the polymer subunits. When UV light is shone on the mixture, the polymers link together to form capsules with yeast trapped inside.Each capsule is about half a millimeter in diameter. Because the hydrogels are very thin and porous, water can easily pass through and encounter the yeast inside, while the yeast remain trapped.In this study, the researchers showed that the encapsulated yeast could remove trace lead from water just as rapidly as the unencapsulated yeast from Stathatou and Athanasiou’s original 2021 study.Scaling upLed by Athanasiou, the researchers tested the mechanical stability of the hydrogel capsules and found that the capsules and the yeast inside can withstand forces similar to those generated by water running from a faucet. They also calculated that the yeast-laden capsules should be able to withstand forces generated by flows in water treatment plants serving several hundred residences.“Lack of mechanical robustness is a common cause of failure of previous attempts to scale-up biosorption using immobilized cells; in our work we wanted to make sure that this aspect is thoroughly addressed from the very beginning to ensure scalability,” Athanasiou says.After assessing the mechanical robustness of the yeast-laden capsules, the researchers constructed a proof-of-concept packed-bed biofilter, capable of treating trace lead-contaminated water and meeting U.S. Environmental Protection Agency drinking water guidelines while operating continuously for 12 days.This process would likely consume less energy than existing physicochemical processes for removing trace inorganic compounds from water, such as precipitation and membrane filtration, the researchers say.This approach, rooted in circular economy principles, could minimize waste and environmental impact while also fostering economic opportunities within local communities. Although numerous lead contamination incidents have been reported in various locations in the United States, this approach could have an especially significant impact in low-income areas that have historically faced environmental pollution and limited access to clean water, and may not be able to afford other ways to remediate it, the researchers say.“We think that there’s an interesting environmental justice aspect to this, especially when you start with something as low-cost and sustainable as yeast, which is essentially available anywhere,” Gokhale says.The researchers are now exploring strategies for recycling and replacing the yeast once they’re used up, and trying to calculate how often that will need to occur. They also hope to investigate whether they could use feedstocks derived from biomass to make the hydrogels, instead of fossil-fuel-based polymers, and whether the yeast can be used to capture other types of contaminants.“Moving forward, this is a technology that can be evolved to target other trace contaminants of emerging concern, such as PFAS or even microplastics,” Stathatou says. “We really view this as an example with a lot of potential applications in the future.”The research was funded by the Rasikbhai L.     Nonabah Lane, Navajo educator and environmental sustainability specialist with numerous ties to MIT, dies at 46

    Nonabah Lane, a Navajo educator and environmental sustainability specialist with numerous MIT ties to MIT, passed away in October. She was 46.

    Lane had recently been an MIT Media Lab Director’s Fellow; MIT Solve 2019 Indigenous Communities Fellow; Department of Urban Studies and Planning guest lecturer and community partner; community partner with the PKG Public Service Center, Terrascope, and D-Lab; and a speaker at this year’s MIT Energy Week.

    Lane was a passionate sustainability specialist with experience spearheading successful environmental civic science projects focused in agriculture, water science, and energy. Committed to mitigating water pollutants and environmental hazards in tribal communities, she held extensive knowledge of environmental policy and Indigenous water rights. 

    Lane’s clans were Ta’neezahnii (Tangled People), born for Tł’izíłání (Manygoats People), and her maternal grandfathers are the Kiiyaa’aanii (Towering House People), and paternal grandfathers are Bįįh Bitoo’nii (Deer Spring People).

    Lane was a member of the Navajo Nation, Nenahnezad Chapter. At Navajo Power, she worked as the lead developer for solar and energy storage projects to benefit tribal communities on the Navajo Nation and other tribal nations in New Mexico. Prior to joining Navajo Power, Lane co-founded Navajo Ethno-Agriculture, a farm that teaches Navajo culture through traditional farming and bilingual education. Lane also launched a campaign to partner with local Navajo schools and tribal colleges to create their own water-testing capabilities and translate data into information to local farmers.

    “I had the opportunity to collaborate closely with Nonabah on a range of initiatives she was championing on energy, food, justice, water, Indigenous leadership, youth STEM, and more. She was innovative, entrepreneurial, inclusive, heartfelt, and positively impacted MIT on every visit to campus. She articulated important things that needed saying and expanded people’s thinking constantly. We will all miss her insights and teamwork,” says Megan Smith ’86, SM ’88, MIT Corporation life member; third U.S. chief technology officer and assistant to the president in the Office of Science and Technology Policy; and founder and CEO of shift7.

    In March 2019, Lane and her family — parents Gloria and Harry and brother Bruce — welcomed students and staff of the MIT Terrascope first-year learning community to their farm, where they taught unique, hands-on lessons about traditional Diné farming and spirituality. She then continued to collaborate with Terrascope, helping staff and students develop community-based work with partners in Navajo Nation. 

    Terrascope associate director and lecturer Ari Epstein says, “Nonabah was an inspiring person and a remarkable collaborator; she had a talent for connecting and communicating across disciplinary, organizational, and cultural differences, and she was generous with her expertise and knowledge. We will miss her very much.”

    Lane came to MIT in May 2019 for the MIT Solve Indigenous Communities Fellowship and Solve at MIT event, representing Navajo Ethno-Agriculture with her mother, Gloria Lane, and brother, Bruce Lane, and later serving as a Fellow Leadership Group member. 

    “Nonabah was an incredible individual who worked tirelessly to better all of her communities, whether it was back home on the Navajo Nation, here at MIT Solve, or supporting her family and friends,” says Alex Amouyel, executive director of MIT Solve. “More than that, Nonabah was a passionate mentor and caring friend of so many, carefully tending the next generation of Indigenous innovators, entrepreneurs, and change-makers. Her loss will be felt deeply by the MIT community, and her legacy of heartfelt service will not be forgotten.”

    She continued to be heavily involved across the MIT campus — named as a 2019 Media Lab Director’s Fellow, leading a workshop at the 2020 MIT Media Lab Festival of Learning on modernizing Navajo foods using traditional food science and cultural narrative, speaking at the 2022 MIT Energy Conference “Accelerating the Clean Energy Transition,” and taking part in the MIT Center for Bits and Atoms (CBA) innovation weekly co-working groups for Covid-response related innovations. 

    “My CBA colleagues and I enjoyed working with Nonabah on rapid-prototyping for the Covid response, on expanding access to digital fabrication, and on ambitious proposals for connecting emerging technology with Indigenous knowledge,” says Professor Neil Gershenfeld, director, MIT Center for Bits and Atoms.

    Nonabah also guest lectured for the MIT Department of Urban Studies and Planning’s Indigenous Environmental Planning class in Spring 2022. Professors Lawrence Susskind and Gabriella Carolini and teaching assistant Dení López led the class in cooperation with Elizabeth Rule, Chickasaw Nation member and professor at American University. 

    Carolini shares, on behalf of Susskind and the class, “During this time, our teaching team and students from a broad range of fields at MIT had the deep honor of learning from and with the inimitable Nonabah Lane. Nonabah was a dedicated and critical partner to our class, representing in this instance Navajo Power — but of course, also so much more. Her broad experiences and knowledge — working with fellow Navajo members on energy and agriculture sovereignty, as well as in advancing entrepreneurship and innovation — reflected the urgency Nonabah saw in meeting the challenges and opportunities for sustainable and equitable futures in Navajo nation and beyond. She was a pure life force, running on all fires, and brought to our class a dedicated drive to educate, learn, and extend our reference points beyond current knowledge frontiers.” 

    Three MIT students — junior Isabella Gandara, Alexander Gerszten ’22, and Paul Picciano MS ’22 — who worked closely with Lane on a project with Navajo Power, recalled how she shared herself with them in so many ways, through her truly exceptional work ethic, stories about herself and her family, and the care and thought that she put into her ventures. They noted there was always something new to feel inspired by when in her presence. 

    “The PKG Public Service Center mourns the passing of Nonabah Lane. Navajo Ethno-Agriculture is a valued PKG Center partner that offers MIT undergraduate students the opportunity to support community-led projects with the Diné Community on Navajo Nation. Nonabah inspired students to examine broad social and technical issues that impact Indigenous communities in Navajo Nation and beyond, in many cases leaving an indelible mark on their personal and professional paths,” says Jill S. Bassett, associate dean and director of the PKG Public Service Center.

    Lane was a Sequoyah Fellow of the American Indian Science and Engineering Society (AISES) and remained actively engaged in the AISES community by mentoring young people interested in the fields of science, engineering, agriculture, and energy. Over the years, Lane collaborated with leaders across tribal lands and beyond on projects related to agriculture, energy, sustainable chemicals, and finance. Lane had an enormous positive impact on many through her accomplishments and also the countless meaningful connections she helped to form among people in diverse fields.

    Could used beer yeast be the solution to heavy metal contamination in water?

    A new analysis by researchers at MIT’s Center for Bits and Atoms (CBA) has found that inactive yeast could be effective as an inexpensive, abundant, and simple material for removing lead contamination from drinking water supplies. The study shows that this approach can be efficient and economic, even down to part-per-billion levels of contamination. Serious damage to human health is known to occur even at these low levels.

    The method is so efficient that the team has calculated that waste yeast discarded from a single brewery in Boston would enough to treat the city’s entire water supply. Such a fully sustainable system would not only purify the water but also divert what would otherwise be a waste stream needing disposal.

    The findings are detailed today in the journal Nature Communications Earth and Environment, in a paper by MIT Research Scientist Patritsia Statathou; Brown University postdoc and MIT Visiting Scholar Christos Athanasiou; MIT Professor Neil Gershenfeld, the director of CBA; and nine others at MIT, Brown, Wellesley College, Nanyang Technological University, and National Technical University of Athens.

    Lead and other heavy metals in water are a significant global problem that continues to grow because of electronic waste and discharges from mining operations. In the U.S. alone, more than 12,000 miles of waterways are impacted by acidic mine-drainage-water rich in heavy metals, the country’s leading source of water pollution. And unlike organic pollutants, most of which can be eventually broken down, heavy metals don’t biodegrade, but persist indefinitely and bioaccumulate. They are either impossible or very expensive to completely remove by conventional methods such as chemical precipitation or membrane filtration.

    Lead is highly toxic, even at tiny concentrations, especially affecting children as they grow. The European Union has reduced its standard for allowable lead in drinking water from 10 parts per billion to 5 parts per billion. In the U.S., the Environmental Protection Agency has declared that no level at all in water supplies is safe. And average levels in bodies of surface water globally are 10 times higher than they were 50 years ago, ranging from 10 parts per billion in Europe to hundreds of parts per billion in South America.

    “We don’t just need to minimize the existence of lead; we need to eliminate it in drinking water,” says Stathatou. “And the fact is that the conventional treatment processes are not doing this effectively when the initial concentrations they have to remove are low, in the parts-per-billion scale and below. They either fail to completely remove these trace amounts, or in order to do so they consume a lot of energy and they produce toxic byproducts.”

    The solution studied by the MIT team is not a new one — a process called biosorption, in which inactive biological material is used to remove heavy metals from water, has been known for a few decades. But the process has been studied and characterized only at much higher concentrations, at more than one part-per-million levels. “Our study demonstrates that the process can indeed work efficiently at the much lower concentrations of typical real-world water supplies, and investigates in detail the mechanisms involved in the process,” Athanasiou says.

    The team studied the use of a type of yeast widely used in brewing and in industrial processes, called S. cerevisiae, on pure water spiked with trace amounts of lead. They demonstrated that a single gram of the inactive, dried yeast cells can remove up to 12 milligrams of lead in aqueous solutions with initial lead concentrations below 1 part per million. They also showed that the process is very rapid, taking less than five minutes to complete.

    Because the yeast cells used in the process are inactive and desiccated, they require no particular care, unlike other processes that rely on living biomass to perform such functions which require nutrients and sunlight to keep the materials active. What’s more, yeast is abundantly available already, as a waste product from beer brewing and from various other fermentation-based industrial processes.

    Stathatou has estimated that to clean a water supply for a city the size of Boston, which uses about 200 million gallons a day, would require about 20 tons of yeast per day, or about 7,000 tons per year. By comparison, one single brewery, the Boston Beer Company, generates 20,000 tons a year of surplus yeast that is no longer useful for fermentation.

    The researchers also performed a series of tests to determine that the yeast cells are responsible for biosorption. Athanasiou says that “exploring biosorption mechanisms at such challenging concentrations is a tough problem. We were the first to use a mechanics perspective to unravel biosorption mechanisms, and we discovered that the mechanical properties of the yeast cells change significantly after lead uptake. This provides fundamentally new insights for the process.”

    Devising a practical system for processing the water and retrieving the yeast, which could then be separated from the lead for reuse, is the next stage of the team’s research, they say.

    “To scale up the process and actually put it in place, you need to embed these cells in a kind of filter, and this is the work that’s currently ongoing,” Stathatou says. They are also looking at ways of recovering both the cells and the lead. “We need to conduct further experiments, but there is the option to get both back,” she says.

    The same material can potentially be used to remove other heavy metals, such as cadmium and copper, but that will require further research to quantify the effective rates for those processes, the researchers say.

    “This research revealed a very promising, inexpensive, and environmentally friendly solution for lead removal,” says Sivan Zamir, vice president of Xylem Innovation Labs, a water technology research firm, who was not associated with this research. “It also deepened our understanding of the biosorption process, paving the way for the development of materials tailored to removal of other heavy metals.”
